I have to thank my mom for this recipe because, as a kid whenever, she made greens she used Kale and Collards. I personally love Kale greens more for their texture, it’s a little crunchy.
Yams
Yams is a popular soul food dish for a reason, and is a must have during the holiday season. It is sweet potato’s with some added ingredients to make it a love affair.
When I was five years old I was watching my grandmother make Yams, and I told her that she was doing it wrong. I told her she needed some syrup, a lemon and orange, to put over the sweet potatoes. I had learned that recipe from watching my other grandmother.
Ingredients
- 1 pound of sweet potatoes
- Syrup
- lemon
- orange
- sugar
- cinnamon
- allspice
- vanilla extract
Steps
- Boil sweet potatoes until they are soft.(Test by sticking a knife through the sweet potato
- Cut sweet potatoes into the same shape. ( I cut them into circle’s)
- Add the cinnamon and Allspice seasoning
- sprinkle sugar over sweet potatoes, then the syrup and vanilla extract
- squeeze lemon and orange
Turkey Roll- Ups
Ingredients
- Honey Mustard
- 6 Plain tortillas (8 inch)
- 2 packs of smoked turkey breast slices
- 7 leafs of lettuce
- 6 slices of tomato ( Also could dice up one tomato)
Steps
- Spread mustard evenly on the tortillas by the edges
- Fill each tortilla with turkey, lettuce and tomato evenly. Then roll up each tortilla.
- Refrigerate for 15 minutes before use or overnight.
- Serving- slice rolls diagonally into 3/4-inch slices.

Jerky
Jerky is a great protein packed snack, with 9 grams of protein per ounce. Jerky is basically meat with no fat and stripped and dried. Beef, Chicken, Turkey, and Salmon, are the popular forms of Jerky.
There are also tons of flavors you can create, and I’ll post my favorites below, as well as brands.
Lemon Pepper Beef Jerky
Steps
- Slice beef thinly and evenly so that it drys and cooks at the same time. (Can use a roast)
- Make a marinade using lemon pepper, black pepper, garlic, salt, and soy sauce.(Place ingredients in a Ziploc bag)Add sliced beef, and mix around until evenly coated.
- Let fridge for 8-24 hours
- After marinade is complete strain the jerky in a colander, then place paper towels at the bottom of your dehydrator, oven rack, or smoker rack.
- Cook for 4 hours on 165 degrees
- You will know the Jerky is done when white fibers are visible, break a piece in half
Steak Dry Rub Beef Jerky
- Slice your beef thinly and evenly throughout. (Cut off fat first)
- Use McCormick Grill Mates Steak rub to season beef. 1/4 Cup of seasoning, Season beef on both sides.
- Place Jerky in Dehydrator, oven, or smoker on 165 degrees. Cook for 6 hours
- There is no marinade process since it’s dry rub, so if you are in not in a rush place beef in fridge for a few hours before dehydrating.
Mac n Cheese

Ingredients
- One box of elbow noodles
- 1 aluminum pan
- 1 pk colby-jack cheese
- 1 pk Vermont sharp cheddar
- 1 pk mild cheddar cheese
- 1 pk Velveeta
- 1pk shredded cheese
- Heavy cream
- Whole milk
- Flour
- butter
Steps
- Make a roux: Melt 1 stick of butter and add 1/2 cup of flour mix evenly season with garlic powder, pepper, and salt or season all. Add heavy cream and whole milk.
- Begin adding cheese cubes, stir constantly on low heat and allow to melt.
- Boil noodles (once noodles are cooked add slices of butter to coat noodles evenly and season with salt and pepper in aluminum pan)
- Add velveeta cubes stirring throughout noodles
- Pour cheese sauce once complete and cover with shredded cheese
- Bake until golden topped
Protein
There are many forms of protein, from food supplements and the most famous one is protein powder. When I first started lifting weights in high school and wanted to gain weight, I was told to buy mass gainer whey protein. Each scoop was around 1,000 calories, which is clutch if you have a busy schedule and can’t eat throughout the day.
